3 cups all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 cup creamy peanut butter
1/2 cup/1 stick butter
1/2 cup honey
2 tbsp milk
1/2 cup jam or jelly (I like using strawberry)
In a larger bowl or mixer, blend flour, sugar, baking soda, and salt. Add peanut butter and butter. Mix with mixer on med-low. Add honey and milk in and blend it well. Preheat oven to 375F. Form small spoonfuls of dough into a little ball (I roll it in my hand and then squish the ball flat). Press thumb into the center of each (I use a little mini spoon). Place about a 1/2 tsp jelly into each indentation (put too much and it's a sticky mess). Bake for 8-10 minutes or until golden brown. Store in airtight container. Makes 4 dozen. I usually make a 1/2 dozen at a time or save half of the dough wrapped in plastic to bake another day.
As much as I miss NJ when I'm not with him it was nice to be home alone baking. I had the music on and just enjoyed every part of the process. I got to stare at the mixer make its rounds the way NJ is mesmerized by it. I don't know why I love baking so much, but it's nice and relaxing. It's also a nice reward at the end, especially when shared! So as the most requested recipe I have, here it is. Try it, you'll love it!
